We calculate our nutritional values based on the nutritional value at the point of sale. Typical nutritional values from either McCance & Widdowson, analytical data or theoretical data from suppliers are used for our calculation. Added oil or salt which we deem essential to the recipe is included in the calculation. For this reason, when salt or oil is explicitly stated in the ingredients table as 'per person' in the method, this has been included in the nutritional value of the meal. However, due to natural variation of each ingredient, nutritional values can be slightly varied depending on the time of the year.
